Food Safety and Culinary Training
NECB has teamed up with Ed Manley to bring food service professionals the latest in HACCP (Hazard Analysis Critical Control Points), Food Safety, Culinary Nutrition, and Culinary Arts Essentials education. This exciting online program will allow food service professionals all over the globe to learn the requisite knowledge needed to pass essential industry certification exams and earn college credit for their efforts. Students will have the flexibility to take courses toward a focused certification or, alternatively, can use their course credit toward an associate or bachelor degree in business.
At the end of each course, graduates will have an opportunity to sit for a certification exam offered by the Global Foodservice Institute. For military personnel, all courses offered by NECB are approved for Tuition Assistance for all of the services and include the cost of certification. All Exams offered by the Global Foodservice Institute are approved under the 9/11 and Montgomery GI Bills.
The curriculum was developed and will be taught online by Ed Manley, a leading industry expert. A 21-year Navy career included serving as a Chief Hospital Corpsman and a Lt. Commander, Medical Service Corps, hospital foodservice director. Professor Manley has been training and testing since 2003, with over 3,000 students earning over 8,000 professional certifications, in places like the White House, Camp David, the Pentagon, VP's Residence, Iraq, Afghanistan, Kuwait, Okinawa, Sicily and civilian and military locations throughout the U.S.
At the end of each course, graduates will have an opportunity to sit for a certification exam offered by the Global Foodservice Institute.
Paid by TA or VA
All courses offered by NECB are approved for TA for all services and include the certifications. MyCAA is available for spouses as well. All certifications offered by the Global Foodservice Institute are approved under the 9/11 and Montgomery GI Bills.
Counts as fully transferable college credits
Each course counts as three credit hours of fully transferable college credit. It is better to say "I have a certification in" than "I took a course in." Credits PLUS certification is the best of both worlds.

Culinary Nutrition
This course reviews all aspects of nutrition as it relates to cooks and managers in order to prepare them to address the nutrition, allergies and desires of their customers. As with all of our courses, practical information you can use when someone says they are a Vegan and asks what you suggest on the menu for them. We'll talk about calories, carbs, popular diets, vegetarian and vegan diets, protein, fiber, vitamins, diabetes, allergens and more, but all things we believe you need to know in order to be the person people turn to when a customer has a special need, making you more valuable, thus worth more money. Certified in Culinary Nutrition (CCN) is the certification earned from the Global Foodservice Institute.
Food Safety
We've made food safety simple, focusing on what you NEED to know to provide safe food to your customers and family, while providing enough in-depth information to pass the nationally accredited . Score 80% or higher on the Simply Safe Foodservice Certified examination and we'll pay your cost to take a nationally accredited exam (ServSafe or Prometric), which you need to operate in most jurisdictions. From when and how to wash your hands, to which bacteria causes what symptoms, we'll talk about all of that, going light on bug names and long on practical, useable information. Simply Safe Foodservice Certified (SSFC) is the certification earned from the Global Foodservice Institute.
HACCP Management
HACCP, being the higher level of food safety management, has a greater potential to boost your career options. Very few people are HACCP certified, so you will stand out. We will talk about setting up procedures to ensure the food is safe from “farm to fork.” You will learn the terminology, the systems, and practical tips to get a HACCP plan implemented. Every public school in the country is supposed to be HACCP certified, the new food safety legislation requires many suppliers to have HACCP in place. So, it is here to stay and growing, so get on board now with 3 college credits and/or a Certified HACCP Manager designation and lapel pin. Certified HACCP Professional (CHP) is the certification earned from the Global Foodservice Institute.
Culinary Arts Essentials
This course reviews culinary arts from the aspect of the cook. We'll discuss terminology we think you NEED to know, so if the Chef asks you to get him a mandoline, you'll know you're not going to a music store for it. We'll discuss positions in the kitchen, equipment, purchasing, nutrition, presentation, menu planning, meat cuts, seafood, cooking techniques, garnishing and more from the wonderful On Cooking book, which we have shrunk down to what you NEED to know. There's no cooking here, that is left to our face to face class where you can earn Level II or III certification. Certified Culinary Professional, Level I, is the certification earned from the Global Foodservice Institute.
